At one table in the soon to open SCALES, a seafood mecca on the Portland waterfront, Sam Haywood sits with the kitchen staff, for an informal meeting. Dana Street, his business partner, was busy seeing that his plans for this top notch seafood restaurant are implemented.
The kitchen staff is coming together with more pastry personnel to be hired said Travis Olson, pastry chef for SCALES. Olson will be responsible for pastries and bread. All manner of bread items will be baked in-house. Olson from the Washington, D.C. area worked in restaurants near the White House – The Hamilton – among others. Also at he 1789 Restaurant, Clyde’s, etc.
Dana Street was conferring with Pat Plourde, the carpenter, who has worked his magic to create the vision Street has for SCALES. The tables were made by Pat and his brother Gil. Pat also worked at Timber, Whole Foods, L.L. Bean’s, Flatbread, Street & Co. and Fore Street. He is an artist who creates sculptures. Please visit PatPloude.com for much more.
SCALES will be open seven days a week. There is expected to be some out door dining. A webpage is under construction. SCALES is located at 68 Commercial Street, in the same building in which the Portland Science Center and Casco Bay Arts are located.
